Homemade walnut ice cream, even without ice cream make

More delicate than hazelnut and pistachio, walnut ice cream is a tasty and easy to prepare homemade dessert.

In this recipe you will find the steps to follow, with and without an ice cream maker: the procedure is almost identical, the difference lies in how the cream is refrigerated to turn it into ice cream.

There are two secret ingredients that really make the difference:

our Sicilian organic walnuts, with their full and decisive taste

our organic orange blossom honey, also made in Sicily, which softens the woody notes of walnut with its touch of orange blossom.


INGREDIENTS for 500 g of ice cream



1. Put the Almafruits organic nuts in a blender and operate it at maximum speed, until they are reduced to powder.

2. Put the egg yolks, sugar and cornstarch in a bowl; beat them with the whisk until the yolks become light.

3. Heat the milk, being very careful not to boil it, and gradually add it to the mixture, stirring with a hand whisk or spatula.

4. When the ingredients are well blended/mixed, pour everything into a small saucepan and heat it for 2 minutes over medium heat, stirring. Also in this case, it is very important that the mixture does not come to a boil: adjust the intensity of the flame to prevent the temperature from rising too high.

5. Remove the mixture from the heat and let it cool down.

6. At this point, add the chopped organic walnuts and orange blossom honey and, finally, the whipped cream. Mix well.

7. We are at the final step: pour the mixture into the ice cream maker and operate it for about 40-50 minutes. At the end, transfer the walnut ice cream to a container, preferably steel, and put it in the freezer to make it reach a slightly thicker consistency.

You don’t have an ice cream maker? Don’t worry: you can put the mixture directly in the freezer, inside a metal baking dish. Let it cool for about 4-5 hours, stirring every 20-30 minutes with a spoon or whips to break the ice crystals.


Walnut ice cream is ready to eat!


Serve with a garnish of walnut, caramel or walnut kernels (walnut liqueur), and with a mint leaf to add freshness and color.
