Would you like cake for breakfast?
Today we are proposing one that tastes of Sicily, created by Alba from Vasa Vasa Kitchen: it has the liveliness of orange marmalade, the intense note of almonds and a soft dough made of extra virgin olive oil.
To make it, just a few steps, a little time and a few ingredients are enough, but chosen very carefully: with Almafruits jam, made like it was used to be made, with the most fragrant Sicilian oranges, our natural organic almonds and our extra virgin olive oil, squeezed from organic olives grown in the Agrigento sun will be so good that you will want to make it again and again!
Here is the recipe, a true tribute to the flavors of our beloved Sicily.
INGREDIENTS – CAKE WITH OLIVE OIL, ORANGES AND ALMONDS
350 gr. Flour 00
200 gr. sugar
200 ml. Orange juice
3 eggs
90 ml. Extra virgin olive oil from organic Sicilian olives
100 gr. Organic almonds from Sicily, shelled and natural
16 gr. Baking powder
250 gr. Organic Sicilian Orange Marmalade
q.s. Icing sugar
PREPARATION
Put the eggs and sugar in a large bowl and beat them with the whisk until the mixture is puffy and frothy.
Add the organic extra virgin olive oil and the orange juice and continue to mix.
Sift the flour and baking powder and use the whisk to incorporate them, mix well to obtain a homogeneous mixture without lumps.
Finally, finely chop the almonds with a food processor and add them to the rest.
Pour the dough of the olive oil cake, almonds and oranges into a 22 cm round baking pan and bake the dough in a pre-heated static oven at 180 ° C for about 40 minutes. The cooking time may vary slightly, depending on the characteristics of the oven; to make sure that the cake is cooked, insert a toothpick in the center of the cake and check that it comes out dry.
Remove the cake from the oven and let it cool to room temperature, then remove it from the mold.
Cut the cake in half and spread the Sicilian orange marmalade on the lower disk. Cover with the top disk and sprinkle with plenty of icing sugar.
The olive oil, orange and almond cake is ready to brighten up your breakfast or one of your healthy and delicious snacks!
